The bottarga lend a flavor reminiscent of sea urchin or caviar, but considerably milder; the lemon sourness made it brighter, refreshing, and addictive. This spaghetti dish is perfectly balanced and its distinct tastes of the sea, in the best possible way. This unusual and incredibly delicious pasta should probably be served in a bigger pasta dish, instead of a “tiny” bowl since it’s quite rich and the flavors should be really savored.
