Cabras Lagoon in the island’s south-west is home to prized bottarga, cured and air-dried grey mullet roe that’s perfect as a nibble or grated over pasta. Thought to have been introduced by the Phoenicians 3,000 years ago, bottarga (from the Arabic battarikh) is made in several places around the Med, but the variety made in the Cabras Lagoon in the west of Sardinia is regarded by many as the best. The bottarga lend a flavor reminiscent of sea urchin or caviar, but considerably milder; the lemon sourness made it brighter, refreshing, and addictive. This spaghetti dish is perfectly balanced and its distinct tastes of the sea, in the best possible way. This unusual and incredibly delicious pasta should probably be served in a bigger pasta dish, instead of a “tiny” bowl since it’s quite rich and the flavors should be really savored.
